Thin Mint Chocolate Fudge Brownies with Peppermint Essential Oil

If you've ever wished you could capture the taste of Thin Mint cookies in a brownie, this is your recipe. These brownies are dense, fudgy, and deeply chocolatey with a refreshing hit of peppermint that cuts through the richness perfectly.

Using peppermint essential oil instead of extract gives these brownies a cleaner, more intense mint flavor. A little goes a long way—just a few drops transform the entire batch. Just make sure you're using food-grade essential oil.

Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 3-4 drops food-grade peppermint essential oil
  • 1 cup semisweet chocolate chips
  • 1/2 cup chocolate frosting (for the thin mint layer)

Instructions

  1. Preheat your oven to 350F (175C) and line an 8x8 inch baking pan with parchment paper.
  2. In a large bowl, whisk together the melted butter and sugar until smooth.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and peppermint essential oil.
  4. Sift in the cocoa powder, flour, and salt. Fold gently until just combined—do not overmix.
  5. Fold in the chocolate chips.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs but not wet batter.
  8. Let cool completely in the pan. Once cool, spread a thin layer of chocolate frosting on top.
  9. Cut into squares and serve. Store in an airtight container.

Tips

The peppermint essential oil is what makes these brownies special. Unlike peppermint extract, which can taste medicinal in large amounts, essential oil gives a clean, bright mint flavor that pairs perfectly with chocolate.
