Carrot Cake Green Smoothie

If you've ever wished you could eat carrot cake for breakfast without the guilt, this smoothie is for you. It has all the flavors of carrot cake—cinnamon, nutmeg, carrot, and a hint of sweetness—but in a healthy, drinkable form.

The green comes from a handful of spinach, which you can't taste at all. It's a great way to sneak more vegetables into your day without even noticing.

Ingredients

  • 1 large carrot, chopped
  • 1/2 banana (frozen for creaminess)
  • 1 cup fresh spinach
  • 1 cup almond milk
  • 1/2 cup pineapple chunks (fresh or frozen)
  • 1 tablespoon ground flaxseed
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon maple syrup or honey (optional)
  • 1 drop food-grade cinnamon essential oil (optional)

Instructions

  1. Add all ingredients to a blender.
  2. Blend on high for 60 seconds, or until completely smooth.
  3. Taste and adjust sweetness if needed.
  4. Pour into a glass and enjoy.

Tips

The spinach is entirely undetectable in this smoothie—promise. The pineapple and banana mask the green flavor completely while adding natural sweetness. If you want a thicker smoothie, use frozen pineapple instead of fresh. The ground flaxseed adds omega-3 fatty acids and helps thicken the smoothie. This is one of my favorite breakfasts on busy mornings because it's packed with vitamins but takes less than 5 minutes to make.
