S'mores Popcorn
Movie night will never be the same after you try this s'mores popcorn. It takes everything you love about s'mores—the chocolate, the marshmallows, the graham cracker crunch—and puts it on popcorn. It's sweet, salty, and dangerously addictive.
I made this for a family movie night and it disappeared before the opening credits were over. Now it's requested every single week.
Ingredients
- 8 cups popped popcorn (about 1/3 cup unpopped kernels)
- 1 cup mini marshmallows
- 1/2 cup chocolate chips
- 1/2 cup crushed graham crackers
- 1/4 cup butter
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Pop the popcorn using your preferred method (air popper, stovetop, or microwave). Place in a large bowl.
- In a saucepan over medium heat, melt the butter. Add the brown sugar and stir until dissolved.
- Add the mini marshmallows and stir continuously until completely melted and smooth.
- Remove from heat and stir in the vanilla extract and salt.
- Pour the marshmallow mixture over the popcorn and fold gently to coat.
- Add the chocolate chips and crushed graham crackers. The residual heat will slightly melt the chocolate.
- Spread on a parchment-lined baking sheet to cool. Break apart once cooled.
Tips
The key to this recipe is working quickly once the marshmallow mixture is ready. It starts to set fast, so have your popcorn and mix-ins ready before you start the stovetop portion. If the mixture is too sticky, you can coat your hands with a little butter to make handling easier. For an extra chocolate kick, drizzle melted chocolate over the cooled popcorn before serving. This keeps well in an airtight container for up to 3 days, but it rarely lasts that long.
