Ingredients
- 12 crimini (baby bella) or white mushrooms
- 8 oz bacon
- 2 tablespoons butter
- 7 oz cream cheese
- 4 tablespoons fresh jalapenos, finely chopped
- 1/2 cup shredded cheese (your choice!)
- 1 teaspoon paprika powder
- Salt and pepper to taste
Instructions
- Preheat oven to 400F (200C).
- Fry bacon until crispy. Let cool on a plate, then crush the bacon.
- Leave bacon fat in pan. Remove mushroom stems and chop them finely.
- Saute the chopped mushroom stems in the bacon fat with butter for about 5 minutes.
- In a bowl, mix the sauteed stems, cream cheese, jalapenos, shredded cheese, paprika, salt, and pepper.
- Stuff each mushroom cap with the mixture.
- Top with crushed bacon bits.
- Bake for 15-20 minutes, or until the cheese is bubbly and golden.
Tips
These are a great make-ahead appetizer. You can stuff the mushrooms a day in advance and bake them just before serving. The bacon fat adds incredible flavor to the filling, so don't drain it. If you want them extra spicy, leave the jalapeno seeds in. For a milder version, use just 2 tablespoons of jalapenos with seeds removed.
